The Shunnouten - The spring water of Fuji-san in a sake glass

We have been shipping the best from Japan to Switzerland for 9 years now. And it is a pleasure for us, even after this long time, to keep getting to know new breweries with outstanding drops...

The purity of the Fuji-san landmark
The Yorozuya brewery has been producing delicious nihonshu for 230 years. The brewmasters place great emphasis on their three local strengths: On the locally grown sake rice, on the water from the local spring - the mountains of the Southern Alps in Yamanashi Prefecture, including the water from the Fuji-san volcano - and on the people they have been working with for years.

From the seed to the noble drop
The rice used is grown by local farmers. And special: during the sake brewing season, these farmers come to the brewery to discuss the quality of this year's rice with the head brewers and to help with the brewing. Nowadays, there are only a few breweries in Japan that work like this.

Their star in the range is The Shunnouten, which translates as 'The chirping of the nightingale announcing spring'. An elegant, fresh and creamy smooth Junmai Daiginjo with a crisp and pure umami flavour, its fruity aromas evoke spring feelings, any time of year.

Because it is absolutely wonderful that you have trusted us completely since day one, that you are enthusiastic about new, exciting moments of relish, that you always keep your good sake glass full and that you have been coming by for 9 years now with noticeable joy & supporting pleasure.

It's almost time, October 1 is Nihonshu no hi - World Sake Day. The celebration of the new sake brewing season begins & is celebrated - in the island nation and around the world!
And the best way to celebrate sake is to drink sake, with a special drop on that special day.
We are pleased to recommend a selection of our special drops that we have grown fond of over the years...

The work of art
This extremely high quality sake is simply an absolute top product. Delicate, fragrant, wonderfully aromatic and with a beautiful, rounded taste of cooked fruit, the Junmai Daiginjo Shirayuki Banzaimon offers a true drinking experience for sake connoisseurs and real connoisseurs - since day 1 in our assortment.

The gold from Japan
Dark chocolate, honey, yeast, dried corn as well as lime blossom and wood. The amber-colored Shirayuki Edo Genroku is a strong and flattering Junmai, fermented in wooden barrels (taru). Complex, multi-layered, with a long, salty-sweet veil the perfect dessert & for years popular with our connoisseurs.

The red rice nihonshu
The X3 Rose, brewed from red rice (menkoina) and triple amount of koji, convinces with elegance, a balanced flavour intensity, combined with a delicate sweetness as well as a nice, light acidity until the long lasting finish. Just our thing & a drop that skillfully reflects our journey - in the glass.

This time: Creamy Burrata, bedded on hearty Jamón (raw ham), with sautéed, lukewarm peach, fresh oregano, some olive oil & blossom honey - that's it.
Aside: The very elegant, slightly sweet and fruity Kuzuryu Ippin. With its soft texture and crisp, spicy flavour served cool to warm an exciting pairing partner.

Culinary conclusion: 'This dish tastes like a beautiful summer love to me. Creamy, with a soft sweetness and at the same time salty with a seductive smoky note from the Jamón. Accompanied by this lovely sake with its slight tanginess - an incredibly beautiful harmony,' Meikel enthuses.

This time: The homemade summer sorbet made of Kabosu fruit liqueur - that's it.
Inside: Kabosu no Susume, the refreshing, racy, citrus-flavoured fruit liqueur, with hand-pressed Kabosu juice. Mild and extremely refreshing, complex on the palate, racy and present as well as intensely fruity. A sweet and palatable aperitif drink, with a low alcohol content and a sourish-bitter finish - a dream in sorbet!

Tip: If you prefer it pink and minty-fresh, try the sorbet also with Aka Shiso, the light, sweetish and fruity Shiso liqueur, with notes of dark berries, cassis, anise and liquorice.

Culinary conclusion: 'Wow! This Kabosu fruit really got it! An extremely refreshing citrus flavour, just the right thing for a hot summer day. Sorbet with a frozen drop of Japan - summer vibes pure!' enthuses Meikel. Experiment succeeded!

This time: A toasted sandwich filled with a mix of seafood & black tiger shrimp. Plus crunchy salty sea beans, avocado, yellow zucchetti & homemade herbed garlic mayo. As a special topping fried banana & a squeeze of lime - that's it.
Aside: The fruity yet aromatic Daiginjo Kokuryu Gin no Tobira. Elegantly mineral and with a cool freshness, this blue mini nihonshu is a real stunner! Easy to drink sake power in mini format.

Culinary conclusion: 'Tropical vibe with real sake power! My beloved Prawnwich gets no competition, but a buddy at eye level. Because this little sake celebrates along - with the creamy, the sweet, the salty, the hearty & the fresh. A summer party snack into the blue...', Meikel says happily.

The Umami Force
If the menu is tasty, this is your drop. Kozaemon Kimoto Junmai is simply a force in taste. Brewed according to the traditional kimoto method, this balanced sake convinces with its fresh and at the same time intense, sweet and spicy roast aromas and its very pleasant acidity - ideal with grilled meat and sausages.

The BBQ Junmai
Inatahime Ryokan surprises with a salty and leathery nose. Aromas of lime blossom and soja mixed with notes of dark chocolate, coffee, tobacco and nutmeg. A very round and intense Junmai, delightful for your barbecue.

The Tangy
Paprika, nutmeg, pine needles, olive tapenade as well as smoked ham and meat pastry in the nose and oily, resinous, smokey and spicy-fleshy in the palate. Goriki Junmai is an aromatic and powerful sake with lots of umami and the perfect match to a barbecue party.

The Adventure
Kozaemon Yamahai Junmai is a veritable taste expedition! With its intense and earthy flavours and also a lot of umami a sensational sake to hearty dishes. If it is a 'Bündner Gerstensuppe' with bacon in winter, it has to be a T-Bone steak or a juicy sausage now.

Shochu - The big boys from Japan

Shochu - The distilled drop of Japan.

Shochu is Japan's second traditional drink besides sake (nihonshu). Sake, the Japanese rice wine, is often mistakenly understood as a distillate. But this is where Shochu comes in, which is actually distilled and, depending on the main ingredient, has a completely different basic taste.

From mugi (barley) to imo (sweet potato), kome (rice) to goma (sesame) - Shochu is extremely diverse in its aromatic facets and, depending on the basic ingredient and drinking method, is suitable as an aperitif, digestive or as an excellent accompaniment to a meal.

10 years in the barrel

The Toki no Choetsu Superiore is a mild, sweet and very rounded barley shochu. Aged for 10 years in French oak barrels, the ideal drop for whisky and rum lovers.

Tasty and lots of umami
The Takeyama Gensui as well as the Kurozaru are two intensive, round sweet potato shochu. Matured in clay pots, both have a great umami taste and a long lasting finish.

Elegance and power
The Mellowed Kozuru Limited (Single Cask) as well as the Mellowed Kozuru Excellence are two incredibly elegant, velvety rice shochu, strong in taste and balanced on the palate.

Gold in the tumbler

The Beniotome Gold - the king with a maturation period of about 8 years - as well as the Beniotome Maru are both extremely mild and elegant barley shochu with a pleasant touch of sesame.

Good things made with love - that's the promise of the team at Tokyo Tapas. At the popular takeaway in the Markthalle at Viadukt, the chefs prepare fresh sushi and sashimi daily. Other Japanese specialities such as miso and udon soups are also very popular. And from now on, you will also find a large selection of your favourite drops from shizuku in a prominent location...

'We've been working with Tokyo Tapas for several years now, and it's been an unbelievably wonderful partnership', enthuses Marc Nydegger, owner and managing director of the shizuku Store. 'Clearly, we were quickly convinced by the idea of a joint pop up in a central location in Zurich and are delighted to now be able to offer our customers their favourite drops at Viadukt as well'.

The new pop up store of Tokyo Tapas & shizuku is open and now offers a large selection of sake, sparkling sake or umeshu. But also lovers of shochu, liqueurs or Japanese rum will get their money's worth.

Fresh & fruity - the Japanese spring pours

Less is sometimes actually more.
And especially in spring it can be fresh, fruity & also a little lighter...
The main thing is quaffable & palate-filling!

Our Japanese liqueurs are chilled to pour
Unlike here, in Japan, every drop that is not unmixed is a liqueur. Which doesn't mean there has to be a lot of alcohol involved. As with their artistic dishes, the Japanese also focus on drinks that are authentic, present and intensely flavourful - fresh, fruity and sometimes surprisingly light - with a variety of exciting combinations.

Sweet-sour & fresh
The Kyo Yuzu Nigori is a light Junmai Nigori with hand-pressed yuzu juice. A refreshing aperitif drink, with low alcohol content (7% Vol.) and a long-lasting finish. Pleasantly fruity on the nose and fresh and sweet-sour on the palate.

Racy & complex
The step up for yuzu lovers is called kabosu. The Kabosu no Susume is a light (4.5% Vol.), fruity and sweet junmai with hand-pressed kabosu juice. With its refreshing citrus taste and tart bitter finish also a perfect spring fruit liqueur.

Minty & fruity
The Aka Shiso looks extremely sweet because of its intense pink color, but it surprises naturally minty, refreshingly fruity and only slightly sweet. This shiso liqueur - with notes of dark berries, cassis, anise and liquorice - is really fresh and light (8% Vol.), a quaffable aperitif drink.

Strong & tangy
Not light but strong in taste, really sweet and with a complex, tangy note, the Ohako Umeshu convinces. This plum liqueur made from Gojiro plums - on a sesame-shochu base - is strongly reminiscent of marzipan and amaretto, and is perfect neat or on ice as a dessert drop or as an excellent cheese companion.

Pure, on the rocks, exciting mixed as KABOSU SOUR, KABOSUJITO or SHISO SPRITZ or served ice cold as sorbet: Enjoy the spring fresh & fruity - Japanese Style.

White tulips, lime blossoms.... and then bam: Gekkeikan Daiginjo! Be pleasantly surprised by this powerful & complex flavour explosion. Fresh, mild, with a wonderful acidity - an experience.

We are there! Our tiny Cup Sake Yuki Otoko convinces not only in the palate, but also practically in the handy drinking glass. Round, powdery and fresh, sweetish and at the same time tangy-bitter - the all-rounder 'ready to enjoy'.

MEIKEL'S KITCHEN by shizuku - Spring Awakening with Asparagus & Sake

He loves food, he loves cooking and he enjoys sake.
Meikel - Graphic Designer, DJ and Sake Addict - tries out, combines and discovers.

This time: A club steak on green, tender asparagus, with spicy Café de Paris sauce à la Meikel, sweet apricot confiture, crunchy radishes and homemade chips - thats it.
Aside: The full-bodied and smooth Asahimai Junmai. A sake made from organic rice, subtly aromatic, with a fresh, balanced acidity, a sweet note and a lingering aftertaste.

Culinary conclusion: 'Asparagus & sake, it just fits!' raves Meikel. 'Tender & crispy, light & strong, sweet & spicy. The cheeky creation surprises me, too. The dish is perfect for a sake pairing and the Asahimai once again a great companion and already for years one of my favorites.... Spring can come - with hungry pleasure!'

Danny serves the SAKURA

When sakura (Japanese cherry blossom) blooms, all of Japan smiles - and we raise our long drink glasses in celebration!
Kanpai at Danny's Japanese Cocktail Bar!

Danny serves today the SAKURA
with the 'drop of Japan': Inatahime Ryokan, a round, intense and rather dry Junmai. A playful sake with aromas of lime blossom, soy, bitter chocolate, coffee, tobacco and nutmeg.

How to mix...
Shake 10ml cherry liqueur (alternatively cherry brandy), 4ml grenadine, 100ml sake, 10ml pineapple syrup in a shaker for 10sec, strain into a chilled glass over a large ice cube (or top up with several small ice cubes) and top with about 150ml cherry blossom tonic (here it was the Thomas Henry Cherry Blossom).
Garnish long drink glass with a nicely sliced lemon zest as well as pickled cherries on a skewer - and kanpai.

Danny's tip...
1 big ice cube in the glass (e.g. 5x5x5cm) offers less surface than several small ones. So you have less dilution in the cocktail and your drink still stays cold for a long time.

How it tastes...
'Like a cherry, with a hint of pineapple, in a tonic! However surprisingly Japanese style', Danny smiles and pours himself another drink to celebrate hanami (Japanese cherry blossom festival). 'And the sake goes great with its flavours. A dry, tangy drink - not only at hanami ;-)'

And on the green the idea was born: Let's organize a golf tournament!

As you know, pairings are our passion. Combining pleasure, joy & friends, that's what we're doing - on Saturday, July 2, 2022 on the Klosters golf course - at the first shizuku golf tournament, nestled in the idyllic landscape of Klosters/Selfranga.

A handicap-effective 18-hole tournament will be played among connoisseurs, with spectacular views of the mountain world and all the more spectacular tee shots.

The exhibition «Sudō Reiko – Making NUNO» highlights the work of renowned Japanese textile designer Sudō Reiko, whose innovative approach pushes the boundaries of conventional textile production and paves the way for new methods of sustainable manufacturing.
Sudō Reiko combines traditional Japanese craftsmanship with new technologies and unusual materials. Her designs can be found in international museums such as MoMA in New York, the Victoria & Albert Museum in London, and from March 11 to September 18, 2022, at the Textilmuseum St.Gallen.

Fruity and versatile

New in our lineup is the Kuzuryu Ippin. Slightly sweet, fruity, with a soft texture and crisp, spicy flavours, an exciting pairing partner with a good dose of umami.

Velvety and full-bodied

Smooth, with a sweet note and a long lasting finish, the Asahimai Junmai flatters. A premium sake made from organic rice, subtly aromatic, with a fresh, minty acidity.

Round and flavourful

This time: A crispy lobster, bedded on Riso Venere, combined with a spicy pea puree and pickled peach, on a light and aromatic spuma made of boiled fish stock, a little cream & a dash of lemon - that's it.
Aside: The impressive Junmai Ginjo Kokuryu Jungin. Fresh & lively, at the same time flavourful & dynamic, this beautiful all-rounder is the ideal food companion and unfolds at room temperature a mysteriously beautiful harmony...

Culinary conclusion: 'Break out is the motto in this delicat menu. Colorful contrasts meet fireworks for the senses. A rather light dish, somewhat sweet, slightly fruity, with a nutty character - and with bite!
