Here we go! Beginning of the new sake brewing season.
‚On this very day I am jazzed and curious at the same time’, Taniyama Makoto (39),
Head of Production of Nakamoto Brewery.
The fact that Japanese sake is savored also in Switzerland - more than 9’000 kilometers away – makes the passionate makers on site very proud. ‚I am truly grateful and honored. The fact that sake is appreciated in Switzerland and also understood as a part of Japanese culture just makes me very happy’, says Makoto.
shizuku is pleased to clink glasses on a new sake year with makers such as Taniyama Makoto. Moreover, we are very curious what exciting ‚nihonshu’ the new brewing season gives birth to. Kanpai – on a product full of passion.
Taniyama Makotos’ personal tip: ‚Manyo Yamatsuru. This product reflects the sake of which my former brewing master teached the essential handicraft to me at that time. After all the years this drop still sets THE example to me and its production fills me with awe and pride.‘

Haha No Hi – shizuku drop tip for Mother’s Day
On island nation Japan there are around 1300 active sake breweries. A small but excellent brewery in Fushimi stands out because it is led since more than 10 years by a passionate woman.
Brew master Mrs. Ootsukasa observes every step of the brewing process. Skilfully and with much love she creates flavourful and convincing sake - such as Karaku Amakuchi - with her small team.
„A Junmai Ginjo brewed with rice from Kyoto and water from Fushimi. The use of mochi rice leads to a sweetish, delicate product that matches with a lot of dishes. A sake that is particularly popular amongst women“, according to Ootsukasa, Shotoku Brewery.
Elegant and tasteful. Fruity-sweetish notes of lychee and fresh strawberries combined with a well-balanced acidity and a lingering aftertaste.

The japanese tea ritual or way of tea (chado) is a matter of finding inner peace. A tradition that has been passed on over centuries and is still kept up passionately today.
Katrin & Gerhard Lange followed this passion. Thus, in 1983, they opened their Länggass-Tee store that is known far beyond Bern today and has become a Competence Center for tea.

Upside down – because of a cheeky little fruit!
Yuzu, the unique Japanese citrus fruit, is rated as an exclusivity over here and inspires star cooks, top gastronomy and scene bars all over the world.
Sweetish like a tangerine, bitter like a grapefruit and much more complex than a lemon – the distinctive, fresh aroma of the yuzu fruit is versatilely combinable and its juice for almost unlimited use.

The light Junmai Nigori with hand pressed yuzu juice is an inviting, cloudy aperitif with a low alcohol content and a lingering aftertaste. Pleasantly fruity in the nose, refreshing and sweet-sourish in the palate.
