Kabosu are juicy citrus fruits, very closely related to the Japanese yuzu fruit.
This yellow-green fruit is not suited to be eaten pure. But the aromatic and intense juice of the kabosu is often used to mix cocktails or to refine dishes such as sashimi, fish in general or warm pot dishes.

Kabosu no Susume is a light, fruity and sweet Junmai with hand pressed kabosu juice. Mild and extremely refreshing in the nose. Pleasant, complex, racy and present as well as intensive fruity in the palate. A sweet and palatable aperitif with low alcohol content and a sourish-bitter aftertaste.
